Tickle Your Taste Buds with Creamy Sweet Potato Soup 6/11/21

A flavor inspired by a Dannon Yogurt recipe, with a few tweaks by moi, this soup is light enough to serve during the summer months and still leave you satisfied. The flavor leaves you looking forward to the next meal.

As everyone knows Bobby and I love to eat! We wake up, have breakfast, and as he straightens the kitchen, he asks, "What's for dinner?" It has become an ongoing joke, but seriously, we are always seeking our next meal. We generally eat out in the evenings. I think this is because we both work from home, and it's a nice escape. Yes, I am perfectly aware this is part of my healthy lifestyle concerns.
What can a person do to monitor what you eat at restaurants? Here are some tips from BistroMD
Check the restaurant's menu ahead of time and choose your dinner prior to arriving. This is difficult for a spontaneous eater, like me, but more power/willpower to you if this works for you. I'm just too easily swayed by other people's orders and that first glass of wine.
Look for the adjectives used on the menu to describe the meal. If you see the word "cream" or "crisp" in any connotation, think high calories! However, the recipe I am going to share at the end of this post is a healthier option of creamy.
Many restaurants give large portions...like who really needs an 8-12 oz. piece of meat? Even if we want it, do we really need that much food? Request a to-go box with your meal and immediately box 1/2 your meal.
The last tip I will share, and my nemesis at almost every meal, is: skip the bread and butter. By the way, The Keg in Plano, TX , located near The Shops at Willow Bend, has the best sourdough bread I have eaten in the Dallas-Ft. Worth area. I digress; skip the bread.
I know that my husband and I will continue to enjoy our evening meals at nearby restaurants. My goal is to use the above tips and also to create some healthier meals when eating at home. It's time to regain my willpower and self-discipline.
Kim's Creamy Sweet Potato Soup
Topping for Soup:
½ c. Almonds (sliced)
½ tsp. Smoked Applewood Sea Salt
½ tsp. Avocado oil
Brown in a small skillet until lightly browned. Set aside
Soup:
1 ½ Tbsp Avocado oil
2 tsp. Cumin
1 c. Sweet Onion (chopped)
½ c. Celery (chopped)
Sauté in a 3.5-4 qt. saucepan until translucent, 4-5 minutes.
Add to saucepan:
3 Sweet potatoes (peeled and cubed)
2 c. Vegetable Broth
4 c. Chicken Broth
1 Tbsp. Smoked Applewood Sea Salt
Bring to a boil, reduce heat, cover, and cook for 20-25 minutes, or until the potatoes are tender but not falling apart.
Place all the veggies in blender. Retain at least two cups of broth in a separate container, then add as much remaining broth as possible to the blender.
Add to blender:
1 ¾ c. Plain Greek Yogurt
2 TBSP. Cilantro (chopped)
Puree until smooth and then return to the saucepan. Pour the rest of the broth into the blender and puree. Add additional pureed broth to the soup until it reaches the density you like in a creamy soup.
When serving, place soup in bowl and add a dollop of yogurt and toasted almonds. Enjoy this unique fresh flavor that becomes quite addictive to your palate.
