Just the Recipe! Great Greek Garbanzo Salad. 6/25/21

A Better Homes and Garden Eat Well, Lose Weight recipe. My 15-year old can't get enough...nor can I.


ree

1 15 oz. can garbanzo beans (chickpeas), rinsed and drained

2 medium tomatoes, cut into chunks

1 large cucumber seeded and chopped (about 2 cups)

1 c. coarsely chopped green pepper

1/2 c. thinly sliced red onion


Mix the following ingredients and add to all the above ingredients and chill 4-24 hours.

2 Tbs. olive oil

2 Tbs. white or red wine vinegar

1 Tbs. snipped fresh mint

1 Tbs. lemon juice

2 garlic cloves minced


When ready to serve place mixture on top of mixed salad greens, salt and pepper to taste, and top with crumbled feta cheese. Now...eat!
